A Seattle Tex-Mex Chain Is Claiming the Old P.F. Chang’s Spot on 8th Street
Cactus Southwest Kitchen and Bar, a Seattle-based restaurant group, is set to open in the downtown Boise space left vacant by P.F. Chang’s.
BOISE, ID—The downtown corner that P.F. Chang’s vacated is getting a new occupant, and it’s trading lettuce wraps for green chile.
Cactus Southwest Kitchen and Bar, a Seattle-based chain with locations throughout the Pacific Northwest, has announced plans to move into the former P.F. Chang’s space on 8th Street in downtown Boise. The restaurant specializes in Southwest-inspired American cooking—think tacos, enchiladas, and the kind of menu that leans heavily on adobe colors and open kitchens.
Cactus has operated in Seattle since 1990 and has expanded steadily across Washington and Oregon. Boise would mark a notable push south for the brand, landing it in one of the more visible restaurant corridors in the Treasure Valley. No opening date has been announced.
For anyone who has watched that particular storefront sit dark, the wait for a neighbor appears to be nearly over.
